Rukmini Iyer

Biography

Selling over 1.75 copies of her Roasting Tin series, lawyer-turned-foodie Rukmini Iyer is the brains behind the minimum effort, maximum flavour cooking revolution. Dissatisfied with her successful career as a lawyer, Iyer started writing recipes and photographing food in her spare time as a way to combine both her creative side and her love of food. After being invited to attend a photoshoot for BBC Good Food, she finally realised what she really wanted to do with her life and quit her job. After attending cookery school, working in restaurants, going freeland and assisting on photoshoots, she felt confident enough to approach a publisher with her idea: The Roasting Tin. Realising that, after working all day, the last thing people want is to spend hours cooking dinner each evening - no matter how delicious and flavourful the meal - Iyer started to create simple meals that can be cooked in one tin. Using the simplest of ingredients and with just a few minutes prep time, these meals are still healthy, flavourful and nutritious. The Roasting Tin was published in 2017, and proved to be incredibly popular. There are now six books in the series, including The Green Roasting Tin, The Quick Roasting Tin, The Roasting Tin Around The World (which won the Sunday Times, Guardian and Daily Mail’s Best Cookbook of 2020) and The Sweet Roasting Tin, which was The Observer, BBC Good Food and Prima’s Best Cookbook of 2021. Thanks to her simple approach to cooking, Rukmini Iyer is an internationally bestselling author. Providing healthy, nutritious and tasty meals, her cookery books have helped a whole generation find confidence in the kitchen.
